Making todays blend

Here's a few pictures of me today making a new blend of Creekside Red. The first picture I am adding 400 pounds of sugar to the blend that consists of Fredonia and Chambourcin. The second picture I'm tasting a sample to check it against the bench test I did last week to come up with the correct blend.

We have a series of Creekside wines. If you ever saw the nice stream that runs along side of the winery you'd understand. I posted a few pictures of it earlier when the Fish Commission was releasing Steelhead.

The Fredonia and Chambourcin were finished fermenting. Blended the two, stabilized and sweetened. Immediatley after blending I racked it over to two tanks in the chiller for cold stabilizing.

Taste test or lab test? We do taste test anything we work with during the day whether it's just racking, filtering or bottling.
