Eddie is a very good winemaker, I don't think you need to worry about him "blow off all those great aromas!!"

There's a better chance that he's 'intentionally inhaling' a little too deep. ;)
 
yes it is the yeast making it boil not heat and it is giving off some wonderful aromas..........and no I don't inhale to deeply might test to much lol
