I think he was refering to the foam on top of the must..... Active yeasties.

There's a better chance that he's 'intentionally inhaling' a little too deep.

yes it is the yeast making it boil not heat and it is giving off some wonderful aromas..........and no I don't inhale to deeply might test to much lol
