I am working on my first Mosti Mondiale Renaissance kit (Chardonnay) and I racked to carboy on day 5 at a SG of 1.025. Added yeast nutrient and things got going in a hurry. I am now at day 12 and my SG is 0.994 and there are few if any bubbles moving through the airlock. The instructions say to go to day 20 when SG should be below 0.995.

My question is, if my SG is 0.994 or less tomorrow, should I rack it off the sediment or leave it till day 20?

I would follow the directions and wait until next weekend. The little extra time won't hurt it and if it isn't finished all the way, it may go a bit more and be easier to degas later.
