Does anyone know where I can get information on how much potassium Sorbate to add to back sweeten? Is it a formula?
 
It should tell you on the package. Mine have always said 1/2 tsp. per gal. Your sorbate has a shelf life. Keep it fresh or you might find it doesn't keep the wine from refermenting. I believe the shelf life is about a year. Arne.
 
The sorbate does not backsweeten. after adding the sorbate, you have to add sugar, simple sugar, honey or some other ingredient to sweeten with. Make sure to always add sulfites with the sorbate. The sulfites (k-meta or campden tabs) stun the yeast, and the sorbate is birth control for the yeast. Add the two and you should be able to not have a referment. Arne.
 
I buy small bottles and store them in the fridge. All of mine state 1/2 teaspoon per gallon.
