Welcome to WMT

I have tried watermelon several times. It clears quite well, possibly too well the pink color on fresh juice falls out with the lees. I have done added color as a few percent black raspberry or sumach berries or aronia which stay in solution. I havenā€™t figured a good way to protect the fruity aroma. At a year I see fresh fruit in mine. We have had some really good watermelon at state fair. Hope yours has good shelf life.
