    A good port

    The wife dusted off all the shelves and bottles and added the latest batches to the shelf. In the process it was noted that we have some wines from Winestock 2007 that remain unopened. One less bottle is unopened as of 5 minutes ago. It seems to be a very nice port. Give me 30 minutes...

    So what ABV should I be expecting on this? Right now, if my math is correct, I'm coming up with 13.8% - shouldn't it be higher? Starting SG - 1.160 After fermentation - 1.042 After f-pack and clearing - 1.054

    My Okanagan Peach Ice Wine has been fermenting slow at around 65-66 degrees. Tomorrow is Day 7 and I don't think it's through yet. I'm thinking I should wait for fermentation to finish before the next racking. Yes?

    Regarding the recent Chilean fresh juice shipments, a few questions: You indicated you would be testing the juice at the store - any results so far? Yeast nutrient - standard ratio of one tsp per gallon? 6 tsp for the whole batch?
