Has anybody used the Wyeast Chianti? I was thinking of using it in a Valpolicella kit? As a long time homebrewer and a new wine maker, I have not used a dry yeast in many years as the liquid yeast have given me better beer. I was wondering if this is the case with the liquid versus dry yeasts in wine making.
 
I haven't used a liquid wine yeast yet. I believe I will soon though. I use a lot of White Labs yeasts for beer although I have been experimenting with Fermentis dry yeasts with excellent results recently. I have only used Wyeast products a couple times and they were great but I normally lean toward White Labs products. They have wine yeasts as well. I will say though that the lag time in wine is nowhere near as important as it is in beer.
 
Havent used the liquid wine yeast either as they are not available locally.
