I bottled a batch of Strawberry today that my son has deemed " Very Nice Dad"
I will have to agree with him somewhat as it did turn out pretty nice.

Nice rich color ! You "must" have had real ripe strawberries for that color

indeed...very nice..wish we lived closer to moderate the shipping costs.....i bet that is one nectar of a wine!
 
Looks great there buddy, indeed nice color extraction. No wine work today, did some beer equipment work though if that counts!
 
Nice job Waldo....I also got busy with some wine...bottled two M.M. kits, a Liebfraumilch and German Muller-Thurgau......Hope to get a kit started tomorrow..

I used red grape concentrate in my recipe to achieve that appleman.

They were indeed real ripe berries tepe. That is the advantage of picking them yourself. You get the "Pick of The Crop" if you will. My recipe for this 5 gallon batch was


28lbs Strawberries-Steam juiced after being frozen first
Water to 5.5 gallon
1-1/4 tsp Pectic Enzyme
6 tsp Yeast Nutrient
2 tsp Yeast Energizer
5 tsp Acid Blend
1 bottle Red Grape Concentrate
9-1/4 lbs Sugar
1/4tsp K Meta
Montrachet Yeast
Begnning SG was 1.080 and finished at .998.
 
That's some mighty purdy wine there, Waldo! And it has the label to match! Nice work!
 
Beautiful wine and label, Waldo. I worked with my wine yesterday. Started an Orange Chocolate Port, stirred a Merlot in secondary, and racked my Hard Cider Wine. Today, my sister is bringing some friends for a tasting and tour (HA!) of the winery. I will start a Gewurztraminer as part of the "tour."

What is your recipe for the hard apple wine? Starting to gather information for this project. What is the ending alcohol %? Gonna be interesting.

That hard cider wine sounds interesting too.
 
Here is the recipe for my Hard Cider Wine. I call it that because the ABV ended up at about 11.5%. I followed the recipe as noted.

Hard</span></span> Cider</span></span>


5 gallon apple cider</span></span>, preservative free, unpasteurized
2 lbs brown sugar
2 lbs honey
1/2 teaspoon whole cloves
4-6 cinnamon sticks
2 pks cote des blancs yeast
5 campden tablets
4 teaspoon acid blend 2 teaspoons yeast energizer
2 teaspoons pectic enzime
2 cups white raisins (optional) I added</font>
1 cup pure maple syrup (optional) I added</font>

Start- day 1 mix cider</span></span> and crushed campdens
Day 2 add pectic enzyme, acid blend, yeast energizer
Day 2 + 6 hours add brown sugar, honey, maple syrup, mix very well
drop in raisins, cloves, cinnamon sticks, mix
Day 3 add yeast.
Ferment till dry. Stir every couple days.
After 2-3 weeks rack. Adjust taste if necessary.
After another 3 weeks rack again. Stabilize but don't clear.
Bottle after another 2-3 weeks.

I am making the Mosti All Juice Gewertztraminer.

The tour was fun. I enjoyed telling about my wines and the process. I am amazed about how much I have learned in the last year by making wine and participating in this forum.
 
I didn't make any wine today, but did start a new beer. A clone of fat tire. The wort is cooling on the back porch right now, its 8 degrees, so it should cool rather quick!
