What was the recipe exactly? Did you take notes when you made it? If you did then post those too. We can't really help if we dont know the basics of the issue. I know my first batch was supposed to be a 1 gallon batch so I bought concentrates plus 1 gallon jug of water. I added both in full and I ended up with almost 2 gallons. I didnt read the recipe fully before starting and missed the "add water to make 1 gallon".
 
The sugar you add gives you more volume, If made from fruit, the juice out of the fruit has to be taken into account. If you have enough juice, fruit, or whatever you made the wine out of, the extra leaves you with something to top up with. Most of us try and have some extra made for that reason. Why do I have 7 gallons of must from a 5 gallon recipe?
Probably because you added too much water.

beardy isn't the first person to mis-read "add water to make 1 gallon" as add "1 gallon of water".
