Has anyone made a MM kit that comes with yeast other than EC-1118?
I've made five and all come with the same yeast. I'm not compaining, just curious. I would imagine it is used because it will ferment dry consistantly.
All mine have been reds.

Pal,

I'm pretty sure that most all of the Mosti kits come stocked with a packet of EC-1118.

Have you ever tried a different yeast on MM kits? ? Say RC212 on a zin? Or Pastuer Red on cab?

Yes, I have used yeast other than EC-1118 on Mosti kits.

Kit wines in general will act differently then a wine made from juice. The manufactures have run many trials to determine the best yeast for each kit. Can you use a different yeast? Yes, but you will be voiding the warranty on the kit. Will you like the wine better? Maybe, but you don't know until you try. If you really want to experiment split the batch in half and ferment 1 with the provided yeast and the other with the yeast of your choice. This way you'll at least get 3 gallons of wine if the test fails to meet your expectations. Of course you may just get lucky and find something that you really like. I would recommend that you do a little research on the yeast before you decide which ones to use because there are a lot more out there that maybe better suited to use then the ones you listed. Then again they may end up being perfect.
To answer your question, no I have never used a different yeast then what is provided in the kit. Why? Because I'm cheap and don't want to mess up a kit I have just shelled out $ for expecting certain results. If I want to experiment I would just buy pure juice and play. Here are some places you can buy the juice and play all you want:
Walkers Fruit Basket http://www.walkersfruitbasket.com/index.htm
American Wine grape http://www.americanwinegrape.com/index.htm
Kamil Juice http://www.kamiljuices.com/
Good luck and lets us know how it turns out.

Actually I've done quite a bit yeast research. Thats what got me curiousif others had used different strains. Surely EC-1118 can't be the magic bullet for all. I understand why it is supplied. It's user a friendly, strong fermenting strain. I've read else where that you can ferment a shoe with the stuff. It's pretty much a guaranteed succcessful fermentation given reasonable conditions. The stuff just isn't that fussy.

Believe it or not I found something it could not ferment. An ice pear wine experiment that seems to have stopped a bit too early for my tastes. But for the most part it is a nice strong strain the will ferment very well.
Vinter's Harvest has released a series of yeasts that look interesting to experiment with and More Wine has a nice variety of yeasts to check out. I just sit and read all the descriptions and plan some of my experiments around the different strains, just so I will be able to see and taste the difference. Go to Scott Labs web sitehttp://www.scottlab.com/home.asp it is full of information.

I dont think EC1118 is the best yeast for all their kits. I just think they use this as its a tried a true yeast that will work well in every kit and has a good range for temps.

I agree. That's the reasoning behind the post. I think they put out a good product but I think we can make it better.

And W.e pretty much sticks with Red Star Premier Cuvee which is almost the same thing, they want to guaranty that their product does what they say so they all use the go to yeast which mainly is these 2. rjS also uses the EC1118. Remember that they have to give your money back every time the fermentation doesnt go right.
