I have a question regarding bottle shock.
When you bulk age a wine how long should you wait before opening?
If I bulk aged a wine for 12 month then bottled for example, when would the "bottle shock" be gone? I have read several different time frames on it, going from a few weeks to 3 months.
Also,off topic,when you label your wines after having bulk aged, do you put the bottling date on the label or the date it was finished and just sat aging?
