I have a question regarding bottle shock.
When you bulk age a wine how long should you wait before opening?
If I bulk aged a wine for 12 month then bottled for example, when would the "bottle shock" be gone? I have read several different time frames on it, going from a few weeks to 3 months.
Also,off topic,when you label your wines after having bulk aged, do you put the bottling date on the label or the date it was finished and just sat aging?
 
The younger the wine, the less time it needs to recover. So, for you, a month is more than enough. A 10 year old bottle may need a lot of time for the sediment to resettle after shipping.

The date is the date the yeast was pitched.
 
Actually, the vintage date is the year the grapes were harvested. It may be a little difficult to tell with a kit wine, so pitching date is close enough.
 
I aged my wines for a year before bottling and bottle shock seems to be gone within a couple of weeks. And I add the date when the wine was started and the date when I bottled.
