I think I know the answer, but i am asking for reassurance!



I have added the stabilizers, fining agents and K-meta to my Selection
Chardonnay/Semillon kit and degassed the wine. It has been in the
carboy for 8 days since those additions. The next step is to rack
to a new carboy and bulk age for a few months (well it could be as
little as 2 weeks, but I'll be doing at least a few months).



THe question is how important is the 8 day mark. Can this be
stretched to 2 or 3 or even 4 weeeks? Or is there something
magical about the 8 day mark as the directions indicate?

Nothing magical I dont believe Trubador, just the amount of time the mfg feels it will take for the wine to be ready for the next step. The main thing is you dont want too leave it on the sediment too long as you might start picking up off flavors. If it has stopped dropping sediment I would say go ahead and rack it to another carboy and continue bulk aging and clearing.. Edited by: Waldo
 
You dont want your wine sitting on those fining agents that long.
A little longer wont hurt but not sure how long is too long. If it were
just sediment from wine settling and not fining agents it wouldnt
bethat bad as a matter of fact, some people and wineries stir it back
into suspension to give the wine a little more complexity. I will try
this soon. I know of a few people on this site alone (not by names)
that have done this with Chardonnay to give it a buttery effect.
 
it looks wonderfully clear, i'll probably rack it tomorrow night to play it safe
