I am soon getting 5 or 6 gallons of red grape concentrate. The question, how many, of those that make grape red wines do an MLF fermentation.
 
I do BUT Im not sure how that juice ws concentrated and that could be a problem. There are certai methods of concentrating juices that make MLF not a good idea at all. Id probably stray from not knowing this or separate it the first time and only do MLF on a small amount to find out what happens. better yet ask the winery where you are getting it if he recommends or does MLF himself.
 
Wade, would you suggest I do a batch and freeze the remainder of the concentrate untill I taste the results of the first batch after MLF?
 
Ive never froxen it so cant say it would be a good idea for that long. MLF can take quite some time sometimes to do its thing.
