Have 3 gallons of Elderberry in a carboy, and an Elderberry tart (she won't blush) in primary at the moment. Beekeeper, extracting tomorrow. Favorite wine last year was "Dry County Red" with a guy getting arrested on the label. Improvise better than I follow directions, and wish I was a bit more methodical.
