I am experimenting with blending wines. I have two separate five gallon carboys that I want to blend together. My issue is I don't have an enclosed 10 gallon container of any sort. Would it be okay if I upped the S02 on the wines, quickly blended all wine in an open primary and then back into the carboy? Thank You
 
Yes that would work. The amount of time is not going to be long enough to cause any damage.
 
Before mixing the full batches together, I would give it a bit of a bench test. Mix a small 25-75 blend, 50-50 blend, and maybe a 75-25 blend. If one of them is better than the others, I would blend them that way and have the excess by itself. Arne.
 
Id even go to 10%/90%

Some blends only need a touch of the other to make a big difference.
 
Agreed. I did a couple different tests and found one that I really like
