Back from a trip to Walkers up in Fredonia NY with 6 gallons each of Chancellor, Rose Blend (Concord and Niagara Blend, I suspect) and Ives. This year I'm shooting for summer wines, with Chancellor being the varietal I buy every year from now on.

Picking yeasts, then stopping by the local winemaking shoppe to pick them up. Do these sound ok?

Chancellor - Lavalin EC-1118 (I used it last year to good success, chaptalizng it u to 15% again)

Concord/Niagara Blend - Lavalin 71B-1122 or D47 (looking to maintain the fruitiness of the grapes)

Ives - Lavalin AC or L2056 (never used this grape before, similar but more intense grapiness than concord, want to preserve that)
