Am making some merlot from grapes my ph is 3.8 I know I should add some acid but I have not tested TA yet to find out how much to add.
Does anyone know if I can test TA and add acid during fermentation ?

[FONT=Arial, Arial, Helvetica]The rule of thumb for tartaric acid addition is 1 tsp to reduce the ph by 0.1 per gallon

all additions should be before fermentation. Add 10 grams of tartaric acid to one gallon of water. Add the acidified water a portion at a time to must stirring all the time and monitoring the ph. repeat if necessary to get ph to 3.4

The PH will drop further .1~.2 after fermentation. You may not need add more. I wouldn't do it if I were you.
