    Cold Stabilization (CS)

    I thought about taking 8 carboys outside for Cold Stabilization. My wife said the temperature fluxuation could damage the wine. It will be a high of 50 and and a low 20 in Arkansas. My freezer only holds two carboys and I thought I would do 8 then rack them at the same time. Any thoughts.

    I have a freezer with a johnson controller set at 28 degrees. The cheap sweet wines I don't bother with only the nice reds. Should I run the all through the freezer? Any thought?

    Can I back sweeten mead with honey and water? I started the wine over a year ago. It's been bulk aging in a carboy. I thought I would back sweeten and bulk age for one more year then bottle. How much sorbate should I add to 6 gallons? Thanks,

    Mine sucks. I've never tasted any other mead. I guess I could drink a glass but I would have to choke it down. I followed the recipe. It's only 10 months old. I guess my question is, does all mead suck? Do you back sweeten mead?

    How long in the carboy?

    I've been making wine for 1.5 years and have made over 1000 bottles. I have been keeping my good reds in the carboy for over a year. Kool aid wine for 4 months. I just talked to a guy that said keep the good red wine for 6 months then bottle it. Any thoughts?
