    The picture of the cherry wine reminds me of the 1st fruit wine my dad and I made when I was a kid. No straining bags back then! It wasn't that bad to rack but it sure looked like something that followed a bad night of drinking and eating too much. The outcome though... well worth the racking!

    smaller vessel clearing quicker

    When we rack and end up with some in a smaller vessel, it's usually the bottom of what we're racking, and I can't say that ours clear faster. (That was a long sentence.)

    We often add tannins to wines for more body and depth for our wines. As far as the how much, that depends on what you're starting with and how you want your end product to feel and taste.

    Explain that it eliminates all of the work of freezing the fruits for long term storage! Saves freezer space! Creates wholesome juices for the family! Wine making is neater! Less mess with pulp! It will make the juice for almost any fruit wine that she wants.

    It doesn't take much to get someone started as an addict. The most important thing around here when I'm making one of "my" wines is that Bert keep his nose out of it. I don't keep good notes and I tend to make wine the way I cook. A little of this a little of that. It works for me!

    degassing

    As fivebk said, you can degass gallon batches just by shaking the jug. I've been known to sanitize my hands and just put the palm of my hand over the opening with my thumb through the handle and shake it that way.     It's going to be a lot of work to remove those pits. Do you have access to a steamer that you can use instead of cooking them? Would you be able to can the juice instead of refreezing it?
