I am making a Grand Cru Riesling this week. It came with 1118 yeast. I was planning on making a wine blend using Alexanders Riesling concentrate and Julie suggested that I use 71d 1122 for that recipe.
IT seems to me that 71d is much superior to 1118 for white wine.
I plan on substituting it for the 1118 that came with the kit.
Any suggestions or concerns.
