What is the winemaker doing in this commerical?

He's taking a barrel sample to check to see if the wine is over oaked, under oaked, or is suffering from any other type of malady. They actually take barrel samples quite often to check progression of the wines.
 
Just for the fun of it Dean what may I ask is "quite often". Thanks Tomy

They usually take about 1-2 ounces per barrel every 2 to 3 weeks.
 
Wow thats a 1/2 gallon every 2 years, quite a bit I'm thinking, plus the natural loss to the angels share amounts to quite a loss of wine in a year if a winery is producing hunderds of gallons. Tomy
 
actually, you'd be surprised at the amount of loss of wine that happens in commercial wineries. Barrels do need to be topped up on a regular basis to prevent oxidation until the barrel reaches saturation points in equilibrium with the humidity in the cellar (the angel's share), then there is bottling losses, filtering losses, transfer losses from tanks, etc. Of course when we are talking about 10,000 cases, the loss of 30 or 40 cases worth are quite minimal.
 
I guess that means that they have 30 - 40 cases of extra bottles then!

Sometimes they will do a "barrel tasting" for the customers. It's a fun way to while away a day.
 
I guess 30-40 cases of two buck Chuck isn't that much really.
