I just pressed 250 pounds of grapes and added potassium metabisulfite, how long must I wait to add my yeast?
 
Usually you will wait at least 12 hours then add pectic enzyme, then wait at least another 12 hours for the yeast.
 
Yep, if you add your yeast beore that you'll have a tough time getting it goin good.
 
Others add enzyme right in the beginning and then add the yeast 12 hours later with no problems But Im a 12/12 guy myself.
 
Thanks again guys but as you can see from my other post "Troubled Cabernet"
I got other issues to take care of and running out of time.
