Hi Everyone, hope all is well!
My strawberry wine I made(fresh fruit ), came out looking beautiful. I'ts been bottled, the smell is wonderful but the aftertaste is less than desirable. I back sweeten it, Maybe not enough... it has a bitter taste to it. Any suggestions? Mixing it as a wine cooler its ok ,but i rather drink it straight. Thanks ,Schatzie
 
excessive tannins will sometime cause a bitterness. can be removed using gelatin but since bottled not very practical.
I assume you know that Schatzie means sweetheart in German
 
Thanks for the info! I will not make the same mistake again (I hope) lol
And Yes, I do know that Schatzie mean sweetheart In German, because I am German. From Hof/Saale upper Bavaria- approx 130 clicks from nurnberg ......and I am sweet lol

as we speak I am cutting 30 lbs of peaches...we shall see How I do!!
