So after the clearing stage I skipped step 4 polishing and racking to step five bottling. Under step 4 it says if aging more than 3 months add kmeta. Is that bulk aging in the carboy or aging in bottle or both? It also mentioned to let sit for two days before bottling. But I mis understood and went straight to bottle. Is this a major issue or should it be ok?
 
Did you back sweeten? Did you add stabilizer? If you back sweetened without meta or stabilizer there is a good chance it will start to ferment and blow out the corks. That will be a big mess.
 
No I didn't back sweet. Just didn't rack again for a couple days.
 
If you didn't back sweeten and your happy with clarity you should be ok. It may not age well without a stabilizer but if you drink it as fast as my family does it should be ok. If your near Minnesota i may be able to help you drink it.
