I think I know the answer, but i am asking for reassurance!
I have added the stabilizers, fining agents and K-meta to my Selection
Chardonnay/Semillon kit and degassed the wine. It has been in the
carboy for 8 days since those additions. The next step is to rack
to a new carboy and bulk age for a few months (well it could be as
little as 2 weeks, but I'll be doing at least a few months).
THe question is how important is the 8 day mark. Can this be
stretched to 2 or 3 or even 4 weeeks? Or is there something
magical about the 8 day mark as the directions indicate?
