Can you ever get the pH down in elderberries and muscadines? I didn't have but one bottle of acid blend on my last elderberry's and the litmus paper was still bright blue after the whole bottle, ran out of acid blend.

I don't know if this really qualifies as a beginner question, but I would say try titration instead of the pH papers. You will get a more accurate depiction of the actual pH.
 
I agree your possibly getting a false reading. IU also have to say that you cant always ge a happy medium and sometimes you just have to deal with getting one being ph or ta close and ignore the other and just sulfite properly to meet it. Its why S02 testers are important.
 
I think that you may have put too much acid in. I use a milwaukee pH meter. They work great. Gotta store the electrode in solution at all times and sometimes re-calibrate it, but it does ensure you get consistent results.
