I have two wines which I am going to add American Oak Spirals (med. toast plus).I plan to have these wines bulk aging for 6 to 9 months. I will be racking them once during the bulk ageing process just to get them off whatever miniscule amount of sediment may be in the carboy.

Can I just drop the spiral in the carboy 6 weeks prior to racking?

Also, I was thinking of just doing one spiral b/c I don't want to overoak. Anyone just put one spiral in? The directions say to put two in, but that seems like it could be quite a lot.
 
Feel free to add as much or little oak as you like, it is your wine. When you rack the wine taste it and if it needs more oak just add the other spiral.
