Question.....I have fermented a Niagra grape juice I purchased from a vineyard. The aroma is great but the flavor is.....well.....nothing I expected since I've had a Niagra wine before. It is strong.....musty....maybe even woody. Trying to think what happened. Anybody out there got some wisdom for me?
 
try a little sugar syrup with a sample may bring forward fruit flavor without making it sweet

What Sal said. 👍 I’ve made a couple Niagara wines and to me it’s a pretty neutral wine that doesn’t really have a lot flavor, if that makes sense. I always fermented dry and then back sweetened to taste.
 
After re reading your question, yeah that’s not how a Niagara Wine should taste. Sounds like the juice was bad or old or maybe got a infection somehow. Definitely shouldn’t have a woody/musty smell. I guess go ahead and backsweeten some and wait it out a month or 2 and see what happenes
