My tweaked RJS VdV Italy Valpola turned out very good. In my opinion this $75.00 US turned out more like what I've experienced with RJS WS $125.00 US kits.
First tweak was to use, in primary, saved grape skins from An RJS WS Super Tuscan kit. In "secondary" I finished fermentation with a pound of raisins added to the bucket (I keep VdV kits in primary bucket till dry). Finally wine was taken off dry with a cup, maybe it was two, of sugar. At kit instruction to bottle wine was bulk aged 2 months and then bottle aged 2 months.
This is the most tweaking I've done to any of my kit wines and as indicated in the title I'm very pleased with the results.
