Island Mist increasing alcohol content

Ok so Dave I stirred the hell out of the grape juice and brought it to a quick boil. Would that release enough of the metabisulphite off gas?
At this point, cool it to 68-70 and pitch the yeast. You’ll probably be fine. EC 1118 yeast is a beast of a yeast and it’ll work out.
You got some bad info about adding that juice, maybe some people do that and that’s fine but most of us don’t.
 
Just as a counter-point, in these Island Mist type wines, the "grape taste" is totally lost, once you add the flavoring pak at the end. It is very similar to adding the white grape concentrate that many brew shops sell to increase the body and mouth feel, if you increase the alcohol content. The small amount of metabisulphite causes absolutely no harm to the yeast.
