I came across this Powerpoint presentation on winery sanitation put together by the Texas Cooperative Extension / Texas A&M. Author is Michael Sipowicz. It goes into a bit more detail than the average home hobby wine maker would need, but if you have a winery or you make a significant amount of wine, I'd recommend it. Sanitation Guide
