Okay, so I have a 5 gallon batch of strawberry that's a beautiful color right now and I'd be doing the final racking when I get home in about two weeks. Is there anything you'd recommend for me during that final rack that would stabilize the wine but still let me have that nice color?

I would recommend adding some before racking if there is no lees that will get disturbed, if so rack off those lees and then add some. Follow the directions on the package a with most things the concentration can be different from one company to another.
 
I think different brands have different stregnths. You need to read the label with Absorbic acid.
