I started a batch of green tomato Sept 10 with
8gal crushed green fruit
15lbs inverted sugar
Cloves & ginger
4 Tbsp lemon juice
1 1/2 tsp tannin
1Tbsp energizer
1/4 tsp K meta
Water to 25L
O G 1.080
Now it is Sept 19 and apparently I have a FG of 0.992.
This was a previous post of mine thinking the tomato was consuming the sugar (to what end?) instead of the EG1118 yeast. Now in 9 days it is smelling better and looking dry but it is only 9 days old!!!? Room has been 68-74F used brew belt first 4 days only. I didn't expect this to be much more than a compost batch but as a beginner, I had hope, any thoughts?
 
Let it sit for a couple more days. Check the s.g. and if it stays the same, rack it off the lees. Give it a shot of k-meta and let it sit under airlock. If you get another good layer of lees, rack it again. After 3 months another shot of k-meta. Another 3 months if it has cleared you can stabalize if you are going to sweeten. I would let it sit for a couple of weeks after sweetening to make sure it doesn't take off again and stick it in bottles. Don't forget to taste it during the sitting time. Good luck with it, Arne.
