I realized that I made a mistake when putting my first wine kit together. I only made it 5 gals instead of 6. I added a little more water, but still probably only have 5.25 gals in the fermenter for the past few days. Will I just be able to add the water when the topping the carboy step comes in, or did I ruin this wine. Im hoping not.
 
Not a problem and you can top it up properly when it gets to the carboy.
 
What type of kit is it...Just wondering?

What was the Original SG?. Checking with a hydrometer is esential to
knowing that you have problems. You probably would have noticed that
your SG(specific gravity) was very high. In wiemaking, a hydrometer is
you best friend, or maybe George is either way, Use this tool
frequently and you will be able to correct yourself before mistakes are
made. We make enough mistakes!
 
Good advise Wade. If a hydrometer is properly used at the beginning, middle and end of making wine, things like this wouldn't happen. I learned the same way Johnny did, and I was making an ice wine kit..... I'm surprised my yeast even started it was so sweet. Live and learn, then go have a drink..........
 
Wade, I did question the original SG of 1.101. The kit had said I would see 1.079 - 1.090. I have been told by quite a few now not to worry, just top the carboy up when its called for. Instead of going to step 2 at 1.01 I will go at 1.03 so when I add the water it dosent take it down too low.

I must admit that I've been slacking in the middle though. Thats why I
like the S-type airlocks though, I can just take a peak, if its
bubbling walk away as long as theres not a lot of sediment. If its not
bubbling , check SG, if SG is high, panic and run to computer and log
on!
