I have not racked it yet but my Dechaunac from Walkers has dropped a diamond mine.
Fine lees is the lower layer the rest are crystals.

Now my Rougeon has dropped very little to none, just fine lees on the bottom.

Rougeon!!!!!! I so wanted to get back up to Walkers to get some of this. This is a great wine that is yet to be discovered. Nice pictures.

Their web site says they still have some might be pre-fermented by now. :)
I have had good success with blending Rougeon and Catawaba.
I am amazed at times the good pictures an iPhone can take.
 
Yes cold stabilization is definitely the way to go !
I brought all my carboys out to the shed for 4 weeks just prior to Thanksgiving and WOW what a major difference.

Great pictures BTW - I always think about it when it too late
 
Agreed, I put my Catawba outside for a few weeks, the bottom of the carboys were covered with crystals/diamonds.
