Have a Reisling going from juice. Added pectic Enzyme 1st day then yeast and yeast nutrient next day. 10 days later reading was 1.020 and transferred to secondary. Wine has been in secondary 6 weeks now and still pretty hazy.

The fermentation is done with so I want to get some sulfite in it to protect it.
Thinking of racking again, add sulfite and sparkolloid it to help clear it up. Wait another month or two and if clear do a final racking.

Too early to sparkolloid it?
