Bottled a batch of the cellar classic winery series California syrah nearly three months ago. This is an 18L kit that comes with a jar of wet skins. I'm thinking I will bottle age at least 18 months before tasting, right now it is bold, bordering on obnoxious, but I can wait.
I used #8 corks, but am now thinking I should re-cork at around 18 months because this wine may need at least two years of bottle aging. Thoughts?
