Bee balm

Julie, I'm planning a mead experiment for next month involving the first herbs of spring.

Bee balm is one of the herbs I have growing. I've clipped some of the leaves and put them in the freezer, but I'm not sure how much I'll use. I've googled it and it seems you need to be somewhat conservative with adding it.

What are you thinking of doing with it?
 
I'm thinking of using Niagara as a base and adding some bee balm, I have it growing wild behind my garage. Not sure on how much to use either. I think I will start small and just keep tasting.
 
I know it's good in tea, do like my Earl Gray. Just can't see it in wine but I'm blind to most things.
 
Are you going to add the flowers or just leaves, stuff is pretty potent, when my dog gets a little smelly we toss his ball into a patch of it to deodorize him a little:) WVMJ
