Started the W.E Symphony kit today and the Blueberry Pinot Noir.

The Blueberry Pinot Noir sounds like something I would really like.


Wade...you don't drink much wine...what are you going to do with all of this???


How big is your wine cellar????...and..... why aren't we seeing photos of it??????
 
I really havent started it besides the framing of it as Ive been doing
everything but. I must get started on it soon. Waldo I sneezed as I was
dumping in the bentonite and it all went it in one shot. I stirred by
hand and with the drill mounted fizz-x like crazy and it just would not
break up even though it is very soft and mushy. Im not worried about it
though as except for kits I never use the stuff and I will seperate it
when racking if it is still clumped which it probably will be, notice
there is no clumps in the Blueberry.
 
Update, after 3 hours the Blueberry Pinot Noir is already bubbling!

I sneezed and dumped all the bentonite in there all at once instead of gradually mixing it in slowly. HeHeHe.

I suppose if it works really well we will all have wade come sneeze in our wines for clarifying
 
1 gal of ultra hot water and a drill and a stirer work with
the start of bentonite mixing then all else can be added but with
out frothing up the juice after it has been added. dont need ot
put Oxygen in there. but meth does get the ben asll mixed
up and does create some crystal clear wines from kits. I
dont like to filter I let gravity and time work it.
 
Yea I know and thats what I had in there, A half gallon of "ultra hot
water" like the directions say and used a big spoon but sneezed and all
the bentonite just slipped in

At that point I stirred some more with the spoon and then with the
fizz-x trying to break it up befrore adding the juice and it just
wouldnt break up. I should have scooped out the few clumps but thought
it would eventually break up. No big deal though, it wont hurt anything.
 
Racked the Blueberry Pinot Noir and the Symphony this morning, the
symphony came out a little low so Ill have to eventually rack into 5
gallon carboy when it comes off the sediment. They are the ones on the right.

Mrs Chevy is allergic to blueberries, soooooooo just to be on the safe side I'm going to keep it out of the house!

Stabilized, added clearifier and racked the Symphony into a 5 gallon
carboy as somewhere this kit seemed to come out short and I transferred
all the sediment. I filled the 5er and 1 750 bottle. The SG was right
on the bottom when I started this kit and I stirred it really good to
so I really dont know what happened and it was at 6 gallon when
started. Oh well.

I also racked and filtered the Ice Wine, this batch took 35 minutes to
gravity filter but look at the difference before and after!

Just filtered and racked the Symphony and the Blueberry Pinot Noir. Also went
to a tag sale and picked up a stereo for my area for $5.00 and I can
even plug in my MP3 player to it. Speakers are mounted above to keep
them out of the way. Have to get some longer speaker wires to hide them or even run them behind the wall.

In order from left to right is Blueberry Melomel, Cru Select Ice Wine,
Watermelon White Merlot, W.E. Symphony, Blueberry Pinot Noir. I love
this gravity filter as it really does a great job, just look at the Ice
Wine and the Symphony!

Keep the bass down Wade. Don't want to agitate the little soldiers next door in storage or soon to be there(AKA your wine storage room). Really though it is good to have some tunes to listen to while working with your wine. Also can keep you entertained while watching all of those carboys bulk age.

I can tell I have to invest in a filter to polish up my wines...What does it do to red wines???
