I know this is an old thread ... but just wondered if the recipe has been updated? Just finishing my first batch of original pee. My lime tree is ripening and thinking this might be a good use for it!!!
So they stabilize before all the sugars are fermented plus adding an F-pak? No wonder it's so sweet and thick. That leaves about a 13% ABV, as anyone taken the fermentation further towards dry?

Truly sounds like a "to each their own" kinda deal.
I was thinking that skipping the fining agents might preserve some flavor depth ... if it will clear completely. The one i'm doing now is a white gewurzt ... and a week after adding the kmet it's definitely settling ...
I finally have enough wine in bottles that I can do a little more aging before bottling on my next batches...
I predominately am making kits ... so ... if I can give the wine some time to bulk age in the carboy ... where do I stop in the written instructions?

I agree ... amazing terrifying television!! Had to limit ourselves to 2 episodes a night ... I wanted to just keep watching and finish the season ... now I have to wait !! not patiently!!

I have enjoyed SOME cheaper kits ... but have done 2 vino italiano kits now and both ended up with a nasty sour/spoiled taste ... wont buy any more of their's again
i just received a renaissance castel de papa (mosti) with an additional allgrape pack. the instructions from mosti don't mention when to add the grape pack ... would it be when it mentions dried raisins? other ideas? those of you tweekers ... any ideas of ways to play with this kit to bring out...

just make sure you understand the process here ... the 5 @5-gallon buckets would only get you thru primary fermentation ... you then will need 5 @5gallon carboys to complete fermentation (plus a couple 1 gallon to handle excess volume to use for topping up)

the bulk of the wine ended up being crystal clear in 1.5 days!!!! but the lees were about 4" tall!! and extremely fluffy ... like dont jiggle the bottle or everything gets cloudy again fluffy!! I've never seen that with SK...
ever seen it work this fast?
This picture was taken seconds after I added the chitosan (45 min after adding the kieselsol) ... amazing immediate flocculation! i've used the combo before but never with this kind of immediate reaction!

But I now have so many bottles that I can be a bit more choosy sometimes when I'm bottling ... I totally have some "misfits" stored in another closet!!
