So when you are extacting wine with the wine thief to do your specific gravity testing do you:

  1. <LI>Pour back into the carboy after testing(assuming of course your equipmenyt ewas previously sanitized properly)</LI>
    <LI>Save in separate jar and add back later when you top off carboy (same note from above applies)</LI>
    <LI>Don't risk contamination - consume or toss(maybe after a few batches I could learn something from the pre-tasting)</LI>

Most if not all here do a combo of #1 and #3

Tasting should be done throughout the process thus I use #3
 
Never toss it. Drink it. You learn more about the winemaking process. For me it depends on which wine thief I use. If it is the Fermtech I put it back. If the turkey baster version I drink it.
 
I have a taste and then pour back the rest. Even using the turkey baster, which I only use for wine, and thoroughly rinse and then rinse with sulfite every time I use it.
