I'm planning on making some peach/mango wine from puree and juice, but found out that i'm limited on my yeast selections. Before I crack open the puree, i'd like to find out if any of my available yeasts will work or if I need to wait and go to my local homebrew store on Monday?

Yeasts I have available in my supplies:
- Montrachet
- Champaign
- EC1118

General recipe:
- one 3 lb can of Vintner's Harvest Peach puree
- one 64oz container of Mango, apple, orange, banana juice (100% no preservatives)
- sugar, acid, tannins, nutrients etc....

Given the general recipe above, i'm looking for some seasoned advice on whether I should use the Peach can's yeast recommendations (Red Star Cote de Blanc or Lavlin 71B) or will one of the three listed above work? I have those three dowstairs and available.

Thanks
