The second batch of wine I ever made was a WE WV California Trinity. I put it together in Dec 2011, bottled it in Jan 2012. I Tried to drink it in Mar 2012 Eeeecchhh. I stored it in the very back of the cellar.

I was using an over stirred (oxidized) Cab as a cooking wine (my 1st batch ever) I ran out of that Cab for cooking and grabbed the Trinity. I started to make the Beef Burgundy, but, I tasted the wine first. WOW what a difference 3 years makes.

It may be the best wine in the cellar next to the Red Mt Cab.
 
I wish more of mine could make 3 years.

I opened my next to last 2010 cab franc/merlot this week. It is wonderful!
