Sweet Potatoe Wine

With Sweet Potatoes being a very large crop in this area I am going to make a test batch of wine. I am following Jack Kellers recipe but for yeast it calls for "wine yeast" and that's all
Any ideas on what type to use
I have 6 different Red Star variety's on hand

Montrachet would be my choice but if you've got 6 red stars on hand any of them will likely do.
