Thanks, I’ve read that…seems like lots just use an open fermenter, wouldn’t you want it under an airlock after a couple days? Thx

Yes, the yeast need plenty of oxygen at the beginning, hence the open fermenter. Wine making is very forgiving (fortunately!) and I think everyone has an opinion as to when to rack and airlock. Once the SG gets closer to 1.0, go for it, rack and let it finish fermenting. Racking too soon while the fermentation is VERY active will cause weird foamy stuff to come out of the airlock and make a mess. Been there.
