I found these wine raisins on the web from a small company in Montreal.

www.domainegeorgia.com/

I want to try making wine from these raisins. Has anyone tried making wine from raisins or 'straw wine'. I really like amarone; is it similar? If I use EC-1118, uvaferm VRB or uvaferm 43 yeast, should I be able to ferment it dry? I don't like a sweet finish. My experience so far has been with kits with a fair amount of tweaking (i.e. different yeasts, adding raisins, etc). I am much open to advice.

Thanks!

(These saperavi raisins are sold by the pound for those who like to add raisins to their kits)

EC-1118 seems to be a very good yeast. It has a great temp range, high alcohol tolerance, and a fast fermenter. I fermented to dry from SG 1.110 in 5 days, using grapes.

I'm sure you will have no problems with the raisins, especially if they are selling them as "wine raisins".
