I bought some pH paper today and used it on some grape/peach must. The pH indicated a 3.2. I do not have a way to check the acid, but, I was thinking that if the pH is right or boarder line and I add acid blend, that will change my pH. Am I right in thinking this will happen.

Usually yes. Some acids will change the ph more then others and sometimes adding acid doesnt do much and thats why its recommended to do bench trials on a small amount and not just adding it to your whole batch. Id leave it alone as upping the acid will lower your ph possibly into a dangerous range.
 
Also remember that for pH the lower the number the higher the acidity. So adding acid blend could make your pH go lower.
