I just started a Cellar Craft Sterling California Pinot Noir kit. I measured the ph at 3.79. Is this too high for this kit or is it ok? My meter is calibrated. Should I go ahead for now and then measure and/or adjust later? Thanks.
 
Don't adjust anything. Just follow the instructions and everything will be fine. BTW, just in case you're tempted (it appears you're a grape winemaker), do not do MLF either.
 
I've trusted the few kits that I've made by not even checking ph or TA and they turned out fine. On a whim, I decided to check this one. I'll leave it alone. Thanks!
