Moscato FWK has been aging now for about three months. I took a sample of it today for a taste test. I did not like it. For one it just wasn't sweet enough for me. It came with one sweeter pack which I used. Didn't taste like the Moscato I wanted so I slowly add 2 more cups of sugar syrup until it got a better taste. It seems OK now. I took a PH measurement and the PH was 3.68. This seems as it maybe a little high although it is right at were the kit started. Can anyone verify this for me? I would like to bottle it soon. When I started the kit it had a PH of 3.67, SG 1.112. It does seem to have a fare amount of alcohol in it. Do I need to do any other adjustments to it other than taste. Lower the PH? If so what would the accomplish?
